Family owned since the 1970’s, Behind the Oaks is located in Schertz, Texas, right outside of San Antonio. Samantha is the third generation of Greaves to operate the farm, and Zack married into the farm life more than 10 years ago. Behind the Oaks Farm aims to bring back the connection between people and their food. Their livestock is always raised with love, nourishment, and respect because they understand that it is the animals that will in return, nourish us.
As the newest stewards of this historic farm, Zach and Samantha have chosen to practice regenerative agriculture as a way to give back to the land and animals that that love.
Behind the Oaks focuses on raising grass-fed beef, pasture-raised chickens and eggs, and in growing and expanding our own apiary to provide the surrounding areas with local honey. For the local community, they have a weekly farm stand near the farm’s entrance on Tuesdays from 3 till dark.

Mandy and Travis are proud to come from a long line of farmers. Mandy is a fifth generation farmer and grew up on her family's citrus farm in McAllen, TX. Travis is a seventh generation farmer and grew up on his family's ranch in D'Hanis, TX. The pair met at Texas A&M University and graduated in 2008 with Bachelor of Science degrees in Wildlife and Fisheries Sciences. Both worked as biologists and educators for several years, Travis abroad and Mandy in south Texas.
Nestled in the heart of the Texas Hill Country, Pure Pastures is a family-owned and operated ranch practicing 100% regenerative techniques. Pure Pastures has been fully engaged since 2015 to perfect rotational grazing practices to provide the most flavorful and nutrient dense meat. Pure Pastures was one of the first South Texas farms to consistently conduct annual soil tests to ensure that they are truly sequestering carbon.
Born and bred with a love for their land, this passion inspired their interest in regenerative agriculture. Pure pastures effectively raises cattle, pigs, lamb, and fowl, and their animals live their entire lives the way they are supposed to live: on rich soil in grassy pastures.
